Donkey represents the Democratic Party (the more progressive or liberal party), while the Elephant denotes the Republican Party (also known as the G.O.P, or "Grand Old Party", which is the more conservative of the two).
I believe the animals were first used by 19th century political satirists and are generally attributed to Thomas Nast.
